Ridge Apple Cider Vinegar is produced by business owner Claudia
Kindler in the apple growing district of Bilpin, in the New South
Wales Blue Mountains.
The business began in 1986, using apples from the Kindler's own orchard,
but the operation has grown such, that additional apples are now purchased
from local growers and are selected on the basis of their sustainable
farming style.
The vinegar is produced through the crushing of a variety of local apples
and the juice is then fermented naturally. The vinegar is stored for
a minimum period of two years after fermentation and culture into vinegar.
This allows the product to mellow and mature
The product is not sterilised in order to preserve the health benefits
provided by the mother of vinegar.
